The great Indian "Bura" - Finely grained sugar

Why am I writing about “Bura”? Most Indians know about it. It is finely grained sugar and generally eaten with rice and ghee. As far as I know everyone knows about “Bura”. It’s the most famous desert for common Indian people especially in Uttar Pradesh.
I love it with Chawal (Rice) and Dahi (Yogurt) and whenever I don’t feel like eating those stupid yuck vegetables “Bura” saves my day!! It is used with other Indian dishes like Panjeere (Made in winters), pickles and many more.

Bura is made grained sugar and it is just carbohydrates. It is very cheap and cost only few Rupees for a kilo. We eat it everyday but no one talk about it. Couple of months back a friend (aahhmm aahhmm) of mine asked me what is Bura? I was shocked to hear that. We had a brief and quiet altercation as my friend refused to accept that people in Uttar Pradesh know about bura. It took me a while to convince my friend that it is one of the most common thing found in Indian kitchens.

But it raised an important question in my mind that there are still many people in this country, especially living in the cities, who don’t know about the food of the common people.

It is true that the Bura Sugar has been a common desert food in UP and Bihar. It is not made from finished white sugar crystals generally available in market in bulk in 100 Kg to 50 kg jute/polythene bags. In fact bura sugar has been in use in india from the period when even white sigar was not industrially manufactured in India. It is fine grain size off white color sugar with pol percent sugar below 97. It is manufactured in India through a process similar to GUR (Jaggery) making. This sugar is having least sulphur content as well as few inorgenic contents of sugar cane juices too and the presence of these inorganic constituents in bura sugar make bura sugar more tasty and nutresus in comparision to white sugar.

i really had no idea that its just powdered sugar. i mean i thought its god knows what. i googled what is bura because i wanted to know what its made out of. its the same as icing sugar.
